Squid Curry



Bought a squeamish thick squid from the nighttime market as well as I dear squid.

I went through my kitchen to run into what I take and cooked this. I'm non certain what to telephone call it, sense of taste is a scrap like Thai Red Curry, but I didn't position inward coriander rootage, nor did I function whatever kaffir lime rind, but but the leaf. There are no spices in it similar an Indian curry.



I served it amongst white rice as well as raw cucumber slices. Lazy me only cooked 1 dish for dinner.
I didn't notice this to be spicy, as well as my ten-yo girl loved it. If you lot prefer it to live hot, add in more or less plane'sec centre chilli into the spice glue.

I happen to take a bit of torch ginger left afterward baking my Torch Ginger Chiffon Cake, and so I but sprinkled it on. It will live smashing to take about, ok to have none. Doesn't really matter. Kaffir lime leaf as well as torch ginger helps to trim back any fishy smell, simply incase in that location is.

Squid Curry

350gm squid, clean too cut
ane/ii loving cup kokosnoot milk (one/2 fruit)
ane/two cherry onion, cutting into thin wedges
ii kaffir lime foliage, sliced
Some torch ginger, sliced

Grind to a glue
three cherry chilli
iii clove garlic
four shallots
i/ii cherry onion
iv inches lemongrass
ane inch ginger

Seasoning
one/ii Tbsp fish sauce
one/two tsp saccharide
Salt to gustation

one. Heat wok together with set inwards iii-four Tbsp of petroleum. Cook spice glue on medium low rut until it looks glossy.
two. Add in ii/3 loving cup of H2O, and seasonings. After it comes back to a boil, prepare it for some other two minutes. Turn heat to high.
three. Add inwards squid and onion wedges. Stir to coat squid with spice paste.
iv. When squid starts releasing liquid, add together in coconut milk together with kaffir lime leafage. Stir it together with proceed on stirring gently until squid is cooked, it won't have long, in all probability one to two minutes.
5. Dish upwardly in addition to sprinkle with more kaffir lime leafage shreds together with Torch ginger, if preferred.




Squid cutting technique:
1. Peel the squid. as well as split the body.
ii. Score the inside surface with a precipitous knife, taking aid non to cutting through.
3. Cut into smaller pieces every bit prefered.

Reason for doing then: Just in case the squid is tough, the scoring makes chewing easier.
This technique can live used on thick squids. If they are pocket-size, it'sec ok to cut them into rings.
Take note that overcooked squid will taste tough as well.
