Grilled Fish With Kokosnoot Bantut Ikan - Mff Kedah Perlis #Eight



Another pop fish dish from the country of Kedah, merely non so good known out of land. 
I think almost of us are familiar amongst fish stuffed alongside chilli sambal. This could live something new to you.

Bantut ikan literally translates as Stunted Fish. I wonder why? Is it because of afterwards filling the fish, the fish looks fatty together with curt? hehehe. I don't know, merely guessing.



I saw this existence sold at the Ramadan Bazaar near my home, too I asked the human whether this is Bantut ikan. He is actually a Chinese Muslim who married a Malay wife, and then he may not be familiar amongst the food. He merely reluctantly told me inward Cantonese, it'sec grilled fish (烧鱼) la, can go amongst and so many names, simply it'sec grilled fish. Hmmm.. mayhap Perak'second version is different than Kedah as about of Kedah'second version that I've seen is yellow alongside turmeric.

For this dish, the norm is to role snakehead (haruan 生鱼) and large snakeheads. But present with the dwindling sum of fish inward the rice fields, people have started to use other fishes. You can use torpedo scad (run into hither), indian mackerel (kembung) or fifty-fifty black pomfret (encounter the version here). Some choose to withdraw the dorsum os of the fish, or so don't. The ingredients used varies amongst recipes but the full general thought remains the same, as inwards "grilled fish stuffed alongside spiced kokosnoot". Bantut Ikan
Hazila and myresipi

vi Kembung fish, weighing about 150-160gm each. (pls order the fishmonger you ask to material this fish, together with they should know what to do)
Salt for sprinkling
Oil for drizzling

½ tsp turmeric pulverization
½ tsp salt
50gm grated coconut

Grind to a paste
i ruby chilli
2 bird’sec center chilli
2 cloves garlic
iii shallots
i cm ginger
i lemon grass (iv inches)
½ tsp fennel seeds
½ tsp cumin seeds

ane. Prepare glue. Mix paste alongside turmeric pulverisation, salt and grated kokosnoot.
two. Sprinkle close to salt over fish together with rub. Stuff the fish alongside the coconut filling. Rub about oil over fish skin.
three. Bake for 200C (fan) for well-nigh twenty mins or until the fish is cooked. (fourth dimension depends on size of fish)
